Yorkshire Mell Cakes

A very old Yorkshire recipe traditionally eat at the supper to celebrate the bringing in of the harvest.


900 g (2lb Flour)

400g (14 oz lard)

Pinch salt

2 teaspoons baking powder

300ml (½ pint) milk

sugar to garnish


Mix together in a large bowl all the dry ingredients,

Add the milk to make into a stiff dough

Roll out the dough into a round about the size of a breakfast plate  1cm (½ inch) thick.

Place on a greased baking tray and bake for about 15 minutes in a moderate oven
