Winter Fruit salad  is a great light dessert after a big meal but you can also serve this fruit salad as a a breakfast dish.


(20 ounce) tin pineapple chunksWinter Fruit Salad
1/2 cup sugar
2 tablespoons cornflour
1/3 cup orange juice
1 tablespoon lemon juice
1 (11 ounce) tin mandarin oranges (drained)
3 -4 red and green apples chopped and not peeled
2 -3 bananas (sliced)



Drain pineapple, and save ¾ cup of the juice.

Put the cornflour and sugar into a saucepan and add pineapple juice, orange juice and lemon juice.

Cook and stirring over medium heat until thickened and bubbly cook for a further minute to cook the flour

Remove from the heat

Put the pineapple chunks, oranges, apples and bananas into a bowl and pour the warm sauce over the fruit

Stir until all the fruit is coated

Cover the dish and put in the fridge to cool

You can serve this on its own or with cream or ice cream
