West African Lime Cake is very easy to make a nice cake for the kids to make.   For more flavour of lime prick the cake when it is cool and spoon lime juice over the top.

Ingredients  West African Lime Cake

2 ½ tbsp. butter
2 eggs beaten
Juice of 1 lime
1 ½ cup flour
2 ¼ tsp. baking powder
Few chopped peanuts (optional)

 

Method

Pre-heat oven to 350 degrees

Cream the sugar and butter

Add the well beaten eggs and the lime juice,

Fold in the flour and baking powder.

Pour the mixture  into greased and floured 8″ square cake tin

Bake at 350 degrees for 25 minutes, or until a straw or skewer stuck into center comes out clean.
