Watercress Salad with Mint and Citrus Dressing a refreshing salad which can be served with meat, chicken or fish dishes.  Works well with the Grilled Salmon Fillets with Lime and Herb Butter.  They key to this summery salad is to use really fresh ingredients.

Ingredients

1 bunch watercress, trimmed and coarsely choppedWatercress Salad with Mint and Citrus Dressing
4 sprigs fresh mint, chopped, about 2 tablespoons
A handful of flat-leaf parsley, chopped
1 heart of cos lettuce, coarsely chopped
1 ripe lime or lemon juiced
1 teaspoon sugar
3 tablespoons extra-virgin olive oil
Sea salt and freshly ground pepper

 

In a small jar put the  lime juice and sugar and shake well

Place into a bowl then gradually add the oil whisking all the time

Put the mixture back into the small jar  (if there is any left over it will keep into fridge for a few days)

In a salad bowl mix together the Combine watercress, mint, parsley and cos lettuce.

When you are ready to serve drizzle over the dressing and sprinkle with sea salt and freshly ground pepper
