Tomato Soup a quick and easy low calorie recipe which provides 8 servings at 72 calories per serving.  You can make this recipe in advance as it freezes well.

IngredientsTomato Soup

2 Medium Onions diced
4 Garlic Gloves
4 Tins of Chopped Tomatoes
1 Pint of Stock (Your preference)
1 Tbs Dried Basil
Low fat oil such as Flora

Fresh Basil leaves to garnish(optional)


Fry the Onions in the low fat oil

Pour in the 4 tins of chopped tomatoes, bring to boil, then simmer for 5 minutes

Pour in the pint of stock, bring to boil, then simmer gently for 5 minutes

Add 1tbs dried basil and season to taste

For a smooth soup blend in a food processor

Garnish with Basil leaves (optional)
