Thai Pork Fillets with Fried Noodles


300 g (10 oz) rice noodles

400 g (13 oz) pork fillet

1tb vegetable oil
1 tb soy sauce
500 g (1 lb) broccoli
3 tb vegetableoil
2 eggs
3 tb fish sauce
3 tb sweet soy sauce
1,5 tb sugar


Slice pork fillets and marinade with oil and soy sauce.
Bring water to boil in a large pan and cook rice noodles for five minutes

Drain noodles and wash with cold water.

Cut broccoli into bite-size pieces and boil in a pan with some salt water.

Take out of the water and set aside.

Heat oil in a wok or a pan then add pork and stir-fry.

Push pork to one side and quickly add beaten eggs.

When they begin to set, gently scramble them. Stir pork and eggs then add broccolli and stir-fry.

Add noodles, fish sauce, soy sauce and sugar and stir well.

Transfer to a warm serving dish
