Thai Coconut Cream Bananas a quick but impressive Thai dessert which is best served warm.  Although creamy this dish is not too sweet and of course contains all the benefits contained in Bananas - A and B6


5 Ripe BananasThai Coconut Cream Bananas

2 cups coconut milk (you can use the low fat variety)

4 Tablespoons granulated sugar

½ Teaspoon salt

1 Cinnamon stick

Toasted coconut to garnish


Heat the coconut milk with the cinnamon, sugar and salt in a saucepan and cook gently until the sugar has dissolved.

Cut the Bananas into bite sized pieces and add to the pan

Cook gently for 5 minutes

Remove the cinnamon stick and discard it

Turn into serving dishes and sprinkle with the toasted coconut

Serve warm
