Tangy Cashew Nut Dip can be served with a platter of raw vegetables for a healthy alternative starter or with cold meats.  It is very easy to make and can be served hot or cold.   As it takes a while to cook give yourself anough time or cook the day before.


8oz cream cheeseTangy Cashew Nut Dip
4 oz cashew pieces, chopped
2 oz peanut butter
1 tablespoons chili paste
½teaspoon curry powder
6 fl oz coconut milk
half tablespoon lime juice
A few finely chopped coriander leaves, optional


Mix together all the ingredients except the lime juice and coriander

Cook, covered, slowly for two to three hours stirring occasionally

Take from the heat and stir in the lime juice and coriander

Serve hot or cold
