Sugar Biscuits


4 oz butter or margarine

4 oz caster sugar

Zest of a lemon

1 egg (separated)

1/4 teaspoon salt

6 oz plain flour

1 oz semolina


Cream together the butter or margarine and sugar and ad the lemon zest.

Add the egg yolk and salt and mix together.

Add the flour and semolina and mix to form a firm paste.

If you have wrap in cling film leave the dough in the fridge for 15 to 20 minutes.

Roll the dough out thinly and cut into shapes of your choice.

Place the biscuits on a greased baking tray.

Lightly beat the egg white brush the tops of the biscuits then dredge wit caster sugar.

Bake in the oven at Ga 4 – 350º for 12 to 15 until pale gold in colour

Leave on the tray for a minute or two to crisp then transfer to a cooling wire.

When cold thee biscuits can be stored in an airtight container.


To vary this recipe you can use orange zest instead of lemon zest or vanilla sugar in place of caster sugar but leaving out the orange or lemon zest.
