Spotted Dick an old English Steamed Pudding traditionally served with custard.  There are lots of explanations as to why it was so named but no definite translation.  Nevertheless this is a filling old fashioned pudding containing dried fruit.


100 g (4 oz)  Self Raising FlourSpotted Dick
pinch salt
50 g (2 oz) shredded suet
50 g (2 oz) caster sugar
50 g (2 oz) currants
50 g (2 oz) mixed peel
1 medium egg, beaten
4 x 15 ml spoon (4 tbsp)


Grease a 600 ml (1 pint) pudding basin.
Mix together all the dry ingredients.
Add the egg and enough milk to make a smooth dropping consistency.
Place the mixture into prepared pudding basin.
Cover with pleated greased, greaseproof paper and foil.

Steam for about 1½ hours.
Turn out and serve hot with custard or syrup.
