Southern Fried Chicken juicy inside and crispy on the outside.  This recipe is for a whole chicken but you can use breasts, if like me you don’t like the bones, or drumsticks and thighs.


1 chicken (2 1/2 to 3 pounds), cut into piecesSouthern Fried Chicken
Oil for frying (peanut oil is best)
2 eggs
1/4 cup water
Liquid flavorings*
Salt and black pepper to taste
2 cups all flour
Seasonings (herbs and spices, sage onion powder, garlic powder, cayenne pepper, paprika etc) for that KFC type flavour use powdered Italian dressing mix


Wash and dry the chicken pieces

In a wok or deep fat fryer start heating the oil

In a bowl mix the eggs and water. If you are going to use liquid flavorings *(hot sauce, chilli sauce, Worcestershire, soy sauce, etc), add it now.

Beat  the mixture with a whisk until thoroughlymixed together as this will be your egg wash.

Add the salt and pepper to the flour along with your other desired seasonings (garlic powder, sage, onion powder,cayenne pepper, paprika etc.) to make your own “secret blend”.

Dip the chicken pieces in the egg wash and then the flour. If you want a thicker crust on the chicken, dip the pieces in the flour first, then the egg wash and then the flour again (with this method you will need more  seasoned flour.

Put chicken pieces in hot the oil. Cover and fry until crisp and golden, about 15 to 20 minutes.

Sprinkle lightly with salt while the pieces drain on paper towels.
