Roasted Tomato Sauce can be made in advance to use to accompany meat or fish dishes or you can use it as the topping base for pizzas.  It will keep for up to 2 weeks in the fridge or 3 months in the freezer.

IngredientsRoasted Tomato Sauce

1kg/2lb 4oz halved, ripe tomatoes

3 cloves of garlic slices

A few sprigs of thyme

Salt and pepper to taste

5 tbsp good olive oil

A pinch of caster sugar



Place the tomatoes and garlic on a baking tray and scatter over the thyme, season to taste

Drizzle with the olive oil and scatter over the caster sugar

Roast at 200C/180C fan/gas 6 for 1 hr until the tomatoes are collapsed and slightly golden on the tops.

Remove the thyme sprigs

Blitz in a food processor
