Red Pepper and Coconut Pasta Sauce


2 Red bell peppers

2 Shallots

Large clove of Garlic

1 teaspoon of dried ginger

Chilli flakes (optional)

Salt and pepper to taste

Small can of coconut cream or coconut milk and double cream.

In a blender blitz together the peppers shallots, garlic and ginger add salt and pepper to taste and scatter a few chilli flakes into the mixture if you wish.

Add the coconut cream or coconut milk and cream and cook for about 15 minutes until the peppers and onions are soft.

Serve with the pasta of your choice.

You can add cooked shrimps or cooked chicken o the pasta for a more substantial meal.
