Potted Shrimps are a traditional Lancastrian dish made with brown shrimp and flavoured with mace.  This is a simple dish to prepare but makes an impressive starter or is good to pack for a picnic.


150 g butter, unsalted and softened, plus extra for greasingPotted Shrimps
450 g cooked small brown shrimps, peeled
good pinch of ground mace
squeeze of lemon juice
1 tbsp chopped flat leaf parsley
freshly ground black pepper


Grease lightly with butter four 150ml ramekins with butter and place in the freezer to chill.

Mix together in a large  the 150g of butter, shrimps, mace, lemon juice, parsley with a good grinding of black pepper

Press the mixture well into the ramekins and then chill in the fridge

Serve with hot buttered toast and if you wish a nice salad.
