Potato, Smoked Sausage and Leek Gratin a tasty, quick to prepare and easy to make one pot recipe that will be a hit with all the family.  Just pop it in the oven and then get on with something else.  A hearty lunch or supper.


4 cups red potatoes washed and diced (don’t peel them)

Potato, Smoked Sausage and Leek Gratin

Salt and pepper to taste
2 Tbs. flour
Milk to cover
Chopped chives
1 cup. Finely chopped leeks
1/2 cup Finely chopped onions spring onioins are good but any onions will do
1/2 lb. Smoked sausage
1/2 cup Bread crumbs
1/4 cup Butter; cut into small pieces


Pre-heat oven to 375° or Gas Mark 5

In a  buttered casserole dish spread  the ½ potatoes, leeks and green onions

Sprinkle with salt, pepper and ½ a tabkespoon of flour

Add the sausage (sliced) and then the rest of the potatoes, leeks and onions

Season again and then add the rest of the flour

Pour milk over just enough to cover

Sprinkle the breadcrumbs on top and dot with butter

Cover and bake for about an hour or until the potatoes are tender

Then remove the cover and bake for a further 20 minutes or until the top is golden brown.


As a variation add some of your favourite cheese to the breadcrumbs
