Pickled Eggs are a good snack or picnic food or can be served with cold meats, salads and pies.  Combine with other ingredients such as ham or corned beef to make a sandwich filling.  As an alternative make the eggs pink by adding some beetroot juice*


12 EggsPickled Eggs
1 tablespoon Salt
2 cups White vinegar
1 cup Cold water
1 tablespoon Mixed whole spices (in garni bag)


Put eggs and salt in cold water and bring to the boil. Turn off heat and let stand for five minutes. Drain.
Place the eggs in cold water then peel
Let them stand in cold water until cool * at this stage you can add some of the juce from a jar of beetroot to make the eggs a pink colour
Mix together the remaining ingredients.
In a saucepan boil them and then allow to cool
When the eggs and vinegar are cold place into sterilized jars
Leave 24 hours before eating
In a sealed jar these eggs will keep for months.
