Peri Peri African Chicken is a traditional African dish and is great for BBQs you can serve it with rice or salad or just on it’s own.  The chicken is marinated so you will need to prepare it in good time or even the night before

IngredientsPeri Peri Chicken

¼ cup paprika
2 tablespoons hot chili powder
1 cup fresh lemon juice
3 cloves garlic, minced
1 ½ teaspoons chopped fresh ginger
1 ½ teaspoons salt
4 chicken breast halves bone-in or legs


Mix together, in a large bowl the  the paprika, chili powder, lemon juice, garlic, ginger and salt

Rub the mixture over the chicken pieces and place in a dish to marinate for at least 3 hours

Preheat a grill for medium heat or use your BBQ or a large frying pan

Discard the marinade then place the chicken under the grill. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.

Finish it off with a slice of West African Lime Cake
