Old English Pea Soup

3 cups fresh English peas (shelled)
4 cups vegetable or chicken stock
2 tablespoons butter
1/3 cup leek, sliced (use white, tender part)
5 fresh mint leaves, sliced
1/2 teaspoon sugar
Salt to taste





Using  large pan melt he butter and saute the leeks over a medium heat until they soften (about 5 minutes).

Add the stock and bring to the boil on a high heat.

Add the peas and mint, bring back to the boil and simmer on a medium heat for 8 to 10 minutes or until the peas are tender enough to puree.

Using a blender puree the soup until it is very smooth.

Add the sugar an salt to taste and serve hot with a scattering of fresh mint.
