No Bake Christmas Cake quick and easy but you can also make mini cakes and decorate them too.  Children can get involved as there is no oven involved.  This is a Delia Smith recipe and packed in a pretty box makes a tasty Christmas gift.

Ingredients

200g/7oz dried mixed fruit (or make up your own with sultannas, currants and raisins etc)
25g/1oz ground almonds

Mini Christmas Cakes

50g/2oz finely chopped glace ginger
Finely grated rind of 1 orange
1 tsp mixed spice*
2 tsp fresh orange juice

To decorate

50g/2oz ready made almond marzipan
75g/3oz ready to roll icing
Icing sugar for dusting

Edible Silver Balls

Method

In a food processor blitz all the ingredients except  the orange juice

Turn the mixture into a bowl and add  the orange juice (enough to make it sticky)

If making a large cake press into a cake tin cool in the fridge for about half an hour then turn out onto a serving plate.

If making mini cakes form into 8 little cakes

Lightly dust a work surface with icing sugar and roll out the marzipan

Then roll out the icing

If making a large cake roll these to the size of the top of the cake

If making small cakes use pastry cutter to make shapes to put on top of them

Place the marzipan onto the cakes and then the icing

Dust with icing sugar and decorate with edible silver balls
