Easy basic Cheescake which you can decorate for any occasion but for Easter you could use edible sugar pearls or  wafer butterflies which you can purchase online. Fresh fruit is also good strawberries and kiwi look very seasonal for Easter.

No Bake Cheesecake


1 and 1/2 cups finely ground digestive biscuits
3 tablespoons butter
3 tablespoons white sugar
8 ounces cream cheese
1/3 cup white sugar
2 tablespoons lemon juice
1/2 cup heavy whipping cream, whipped


Melt the butter and add it to the crushed biscuits and the 3 tablespoons sugar

Press into a 7″ loose bottomed cake tin and allow to cool in the fridge

In another bowl, beat cream cheese, 1/3 cup of sugar and lemon juice

Whip the cream then fold it into the cheese mixture

Spread the mixture over the top of the biscuit base

Chill in the freezer for about an hour then decorate as you wish
