Christmas wouldn’t be Christmas without the traditional Mince Pies.  Its ingredients can be traced back to the 13th century.   This is made from ready made mincemeat but you can use your own Home made Mincemeat.


225g cold butter , dicedMince Pies
350g plain flour
100g caster sugar*
280g mincemeat
1 small egg , beaten
icing sugar , to dust

* You can use golden caster sugar


Preheat the oven to 200C/gas 6/fan 180C.

To make the pastry, rub the butter into the flour, then mix in the sugar and a pinch of salt. Form the pastry into a ball, don’t add any liquid but knead it briefly. The dough should resemble shortbread dough.

Line one 12 and one 6 hole bun tins with the pastry you can use a pastry cutter or do it by moulding the pastry into the tins.

Save enough pastry to make the lids either by hand or using a smaller pastry cutter

Spoon mincemeat into the lined tins and place a lid on each and stick them to the pastry lining using milk or a little beaten egg.

Brush the tops with beaten egg and bake for 20 minutes until golden brown

Leave them to cool  for a few minutes then place on a cooling rack.

When they are cool sprinkle with icing sugar

You can make these pies more elegant by cutting a star or other shape and placing it on the top of the pies instead of a sealed lid or you can bake them without a lid and when they are cool top them with icing  or cream.
