Lentil Soup (dahl) is cheap to make and is delicious and is an everyday recipe in Indian homes.   This is Lentil Soupa good dish for vegetarians.  You can serve this soup with rice or naan bread.

Ingredients

½ cup, rinsed Split lentils
1 tablesp Olive oil
1 medium Onions, chopped
2 cloves Garlic
1 small Green Chilly, finely chopped
4 cups water or vegetable stock
1 teasp salt
1 teasp Cumin seeds
1 teasp coriander seeds
½ teasp Peppercons
¼ teasp ground ginger
¼cup Lemon juice

Method

In a saucepan dry roast the  cumin seeds, corriander seeds and peppercons and then crush them using a pestle and mortar

Heat the oil in the pan and gently fry the onion, garlic and green chilly over medium heat for about 10 minutes.

Add the rest of the ingredients except the lemon juice and bring to the boil

Place the lid on the pan and cook over a medium heat for 25 minutes by which time the lentils should be cooked.

Blend the soup then return to the pan to re-heat you can add a little more vegetable stock at this stage if you want a thinner soup

When you are ready to serve the soup stir in the lemon juice
