Left-over Ham and Potato Bake a tasty dish using left-over ham and potates.  This is the basic recipe but you can add more left-overs such as peas or broccoli or add some new ingredients like sautéed mushrooms or cherry tomatoes.


1/2 medium onion, chopped

Left-over Ham and Potato Bake

1/4 cup butter
1/4 cup flour
1 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. pepper
1 1/2 cups milk
2 cups grated cheese (Red Leicester is good)
1/2 lb cooked ham, diced
6 cups cooked potatoes diced
1/4 cup chopped fresh parsley or chives


Preheat oven to 350.

Chop the onions and cook gently in butter until tender

Add the flour, salt, mustard, and pepper and cook for a few minutes

Add the milk slowly stirring all the time until the sauce thickens

Add 1 1/2 cups of the cheese and stir until it has melted

Add the ham, potatoes and parsley or chives stirring well to combine all the ingredients being careful not to break up the potatoes.

Transfer into a greased baking dish and sprinkle the remaining cheese on top

Bake in the oven for about 30 minutes

Serve at once with crusty bread or a green salad
