Lebanese Cucumber Soup is a cold  soup which is simple to make and very refreshing in summer time. This cold soup is very popular throughout Middle Eastern countries.  It is a very healthy meal too at only 90 calories per serving.

Ingredients

1 medium cucumberLebanese Cucumber Soup
2 spring onions
1 clove garlic
8 fl oz (225 ml) carton natural low-fat yoghurt
2 1/2 fl oz (75 ml) sour cream
1 tablespoon chopped fresh mint
Mint sprigs for garnish
1 pinch ground cumin
1 teaspoon lemon juice
Salt and freshly ground black pepper

Method

Slice very finely a little of the cucmber for garnish.

Peel and grate the rest of the cucumber over a bowl to catch any liquid.

Trim the spring onions and very finely chop the bulbs and about 3 in (80 mm) of the green stalk.

Crush the garlic then chop it very finely

Add this to the cucumber along with the rest of the ingredients including the liquid from the cucumber and mix together.

Season to taste with salt and freshly ground pepper

Chill in the fridge for about an hour then garnish with the slices of cucumber and serve
