Lebanese Chicken Shish a traditional Lebanese dish and is normally served with warm pita bread but can be served with rice.  Lebanese cuisine uses a great deal of chicken and lamb with a selection of fruits and vegatables.


4 chicken breasts cut into thin stripsLebanese Chicken Shish
6 crushed garlic cloves
1/4 cup lemon juice
1/4 cup olive oil
1 tsp paprika
1 tsp cinnamon
1 tsp sea salt

Basil to garnish


Place the chicken to a large non-reactive bowl together with the garlic, lemon juice, olive oil, paprika, cinnamon and sea salt.

Make sure all the chicken is coated with the marinade then cover with cling film

Allow to marinate for about two hours in the fridge

Skewer the chicken pieces on wood skewers (soak these in water first so they don’t burn)

At this stage you can choose to barbecue them or cook in a frying pan in a little olive oil

Cook the chicken for about 5 minutes on each side or until done.

Serve garnished with fresh basil
