Hummus is a tasty spread made from chickpeas and can be used as a dip or a filling with a mixture of vegetables in a pita.  Hummus can be made with dried chickpeas but the result is much better with tinned or bottled ones.  Will keep refrigerated for up to 3 days.

Ingredients

1 16 oz can of chickpeas or garbanzo beans

Hummus

1/4 cup liquid from can of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini (sesame seed paste)
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil

Parsley to garnish

Drain chickpeas and set aside liquid from can.
Blend together remaining ingredients using blender or food processor.
Add 1/4 cup of liquid from chickpeas.
Blend for 3-5 minutes more on low until thoroughly mixed and smooth.Transfer into a serving dish and form a well in the middle and drizzle olive oil about

1-2 tablespoons
Garnish with parsley and serve immediately with warm pita bread
For a spicier Hummus you can add finely chopped chillis or a little  cayenne pepper or even some Curry powder or paste.
