Hot Potato Salad


4 to 5 medium boiling potatoes                                                 
(1 1/2 lb.), cooked with skin
6 slices bacon
1/2 c. finely chopped onion
4 tbsp. cider vinegar
3 tbsp. water
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. freshly ground pepper
2 tbsp. chopped fresh parsley


Peel and cut the cooked potatoes into thin slices

Fry the bacon in a frying pan until crispy then drain on kitchen paper.

In the same pan in the bacon fat fry the onion until it starts to brown

Stir in the vinegar, water, sugar, salt, and pepper. Cook,for a minute or two  stirring constantly

Pour this hot mixture over the potatoes and sprinkle the cooked bacon in stirring until all the potato is coated with the vinegar mix.

Place into a serving dish and garnish with fresh parsley
