Grilled Salmon Fillet with Lime & Herb Butter can be either a starter served with a fresh green salad or watercress salad or as a maindish served with new potatoes, pasta or rice.  If lime jouce is not readily available you can substitute  it with lemon juice.



5 tablespoons unsalted butter (softened)Grilled Salmon with Lime and Herb Butter
2 tablespoons lime juice
Tablespoon of chopped parsley
Tablespoon of dill
½ Coriander leaves (optional)
Salt and freshly ground black pepper
4 (6-ounce) salmon fillets
Cooked pasta,rice or new potatoes or a green salad to serve

Place the butter, lime juice , herbs and salt and pepper into a bowl and blend together well

Use a little of the butter mixture to coat the top side of the salmon fillets

Grill the salmon for 2 to 3 minutes then turn them over coat withy a little more butter mixture and grill for a further 2 to 3 minutes.

Serve hot with the remaining Lime and Herb Butter
