Greek Style Chicken Stew an easy and quick to make hearty dish.  This dish can be served with rice, couscous, chips or mashed potatoes.  For a lighter dish serve with a green salad and/or crusty bread.


1 cooked chicken (approx. 2 lb/1 kg)Greek Style Chicken Stew
2 onions
2 cloves of garlic
2 tbsp olive oil
2 pints (1 litre) chicken stock (for a thicker stew add less stock)
4 tbsp lemon juice
1 sprig of thyme
7 oz (200 g) artichoke hearts
salt and pepper to taste
3 1/2 oz (100 g) sour cream

Bone and skin the cooked chicken and cut into chunks

Peel and chop the onions

Peel and crush the garlic cloves

On a large pan heat the oil and fry the onions and crushed garlic and chicken chunks gently for about 4 minutes

Add the chicken stock and lemon juice

Drain the artichokes and finely chop the thyme and add these to the pan and season

Simmer for about 8 minutes then gradually add the sour cream

Serve hot
