Gazpacho

A refreshing cold soup served in summertime in Spain

Ingedients

1/2 medium onion
1/2 standard cucumber
1 green pepper (the long thin type) or half a regular green pepper
1 small red pepper
clove of garlic
1 cup olive oil
2 soup spoons vinegar
a little stale bread – this quantity can vary depending on taste
some cold water
3 ice cubes

 

Place the tomatoes in boiling water for about 30 seconds this makes the skin easier to remove

Peel and de-seed the tomatoes

Then chop up the tomatoes, onion, garlic, cucumber and green and red peppers.

You don’t need to chop them too small as they are all going into the food blender.

Add all these ingredients to the blender including the oil and vinegar in batches placing each finished batch into a large bowl.

At this point you have a choice to go for a chunky soup but if you want a smoother soup put the mixture through a sieve.

At this point you can add water to thin the soup if required

Add the ice cubes and place in the fridge to chill

Served chilled
