Egg Fried Rice


150g/5½ oz/2/3 cup ling/grain rice                                   

3 eggs beaten

2 t6easp vegetable oil

2 garlic cloves crushed

4 spring onions (scalliuons) chopped

125g/4½ oz71 cup cooked peas

1 teasp light soy sauce

Pinch of salt

sshredded spring onion (scallion) to garnish


In a saucepan of boiling water cook the rice until almost cooked

Drain the rice and rinse it under cold water then drain again

Put the beaten eggs into a saucepan and cook over a gentle heat until scrambled

Ina wok heat the oil and add the garlic, spring onions and cooked peas and saute for 1 – 2 minutes stirring occasionally.

Stir the rice into the mixture combining all the ingredients together

Add the eggs and soy sauce to the wok and season with the pinch of salt, stir well to mix in the egg

Put the egg fried rice into a serving dish and garnish with spring onion
