Easy Home-made Pasta



Enough for about 4 servings                                     

3 cups all purpose or bread flour

5 eggs

1/2 tsp salt


Beat the eggs in a bowl and set aside

In a bowl mix together, by hand,  the flour salt and beaten eggs

Form the mixture into a dough similar to a stiff bread dough

Turn out the dough onto a floured board and begin to knead the mixture for about 10 minutes until it takes on a silky appearance

Let the dough rest for about 20 minutes

Meanwhile take a large pan fill with water salt to taste and boil it

Take a small chunk of the dough about a rounded tablespoon and make into a sausage shape

Roll this dough  and as it gets thinner and longer, keep lifting it up and turning it over

Roll until it is as thin as possible adding a sprinkling of flour if it begins to stick to the board

Once all the pasta has been rolled out into sheets, take a knife and cut it into the shapes you want

The pasta will take about 3 minutes to cook so make sure before you start to cook that you have your sauce already prepared.
