Date and Walnut Cake



8 oz Chopped Dates

4 oz vanilla sugar

pinch of salt

1 level teaspoon bicarbonate of soda

2oz margarine

8 tablespoon of water

1 egg (beaten)

2 oz chopped walnuts


In a mixing bowl place the sugar, salt, dates bicarbonate of soda and margarine.

Boil the water and pour into the mixing bowl and mix well until the margarine melts

Add the walnut, beaten egg and flour and mix to a smooth batter like consistency

Grease and line a 2lb loaf tin or baking tin and pour in the mixture

Bake in the centre of the oven for 1 and 1/4 hours until firm

Cool in tin for 10 to 15 minutes


This cake is ideal for picnics and and be eaten buttered or topped with icing and more walnuts
