Cucumber Salsa to serve with a host of dishes including the recipe for Pan Fried Trout.  A nice accompaniment to a BBQ to serve with chicken or steaks.


1/2 a cucumber, deseeded, finely chopped
2 tomatoes, finely chopped
2 tablespoons finely chopped red onion
2 tablespoons coriander leaves, chopped
1 teaspoon balsamic vinegar


Combine all the ingredients together in a large bowl and mix well

Salt and Pepper to taste

Let the salsa stand for 15 minutes before servingCucmber salsa
