Creamed Baby Carrots are a good accompaniment to serve with any meat or fish dish and you can substitute the carrots for leeks, potatoes or use the cream sauce for serving with fish or meat dishes.


A bundle of fresh baby carrotsCreamed Baby Carrots

1 oz butter

1 egg yolk

2 fl oz double  cream

Salt and pepper to taste

Thoroughly wash the carrots

Place the carrots into salted, boiling water and simmer for about 15 minutes until tender but not too soft.

Drain all the water from the carrots remove from the pan and keep warm

To the saucepan add the butter, salt and pepper.

Beat together the egg yolk and the cream then stir into the butter until the saue thickens.

Pour the sauce over the carrots to serve
