Corned Beef Hash a cheap and easy meal that you can prepare in 10 minutes and cook in just 20 minutes.  A very filling meal and great for kids.

IngredientsCorned Beef Hash

1 tin of corned beef, cut into cubes
3 large potatoes, diced
4 carrots, diced
1 large onion, diced
salt and pepper
2 oxo cubes
1 stock cube

Fresh Parsley leaves to sprinkle

Method

Over medium high heat, place the carrots, onion and potato in a medium sized pan, then fill with water till the water is about a inch above the vegetables. Add salt and pepper to taste.

Mix the stock cube with a small amount of water and add to the pan with the oxo cubes.

Bring to the boil, then once boiling add the cubed corned beef this will start to break up.

Once the meat as broken up, turn down to a medium heat and cook for about 20 minutes

Watch the water level and stir occasionally so it doesn’t sticktaste

Add more salt or pepper if required.

Sprinkle with fresh leaves of parsley and serve with crusty bread.
