Coconut Biscuits quick an easy to make and perfect for serving with a mid morning cuppa.  If you wish you can sandwich them together in pairs with a butter cream filling.


125g (4oz) butterCoconut Biscuits
1 cup castor sugar
1 egg
2 cups self-raising flour
pinch of salt
1 cup coconut
extra sugar


Preheat oven to 200C/400F/Gas 6.

In a mixing bowl cream together the butter and sugar

Add the sifted flour, salt and coconut mix well

Form the mixture into a dough and take pieces to form into balls

Flatten these balls into a rounds and press one side in the extra sugar

Place on greased baking sheets and bake for 10 to 15 minutes.

This recipe makes about 40 biscuits
