Clear Tomato Soup is a light first course soup and can be made very quickly it only takes about 5 minutes to prepare and 20 minutes to cook.  This recipe will serve 4 for a starter.


1 tbsp olive oilClear Tomato Soup
1 large onion, finely chopped
5lb/2.25kg really ripe tomatoes
Salt, pepper and sugar
A handful of basil leaves


In a large saucepan heat the oil and gently fry the onions until they a soft and translucent

Roughly chop the tomatoes place into the pan and cook until they are soft (for about 20 minutes)

Blitz in a food processor and then pass through a sieve

Return to the pan and add salt, pepper and about a teaspoon of sugar to taste. Reheat, stirring all the time , but do not allow the soup to boil

Serve sprinkled with basil leaves and crusty cheese and garlic bread
