Chilli con Carne a great one pot meal and good for when you have friends around as you won’t spend all your time in the kitchen.  You can serve this dish with rice or with Cheese and Garlic bread cut into chunks.


1 tbsp oilChilli con Carne
1 large onion
1 red pepper
2 garlic cloves , peeled
1 heaped tsp hot chilli powder or 1 level tbsp of mild chilli powder
1 tsp paprika
1 tsp ground cumin
500g lean minced beef
1 beef stock cube
400g can chopped tomatoes
½ tsp ground corriander
1 tsp sugar
2 tbsp tomato purée
410g can red kidney beans


Chop and dice the onion and pepper

In a large pan heat the oil and add the onion  fry gently until soft (about 5 minutes)

Add the garlic, red pepper, chilli, paprika and cumin stir and cook for a further 5 minutes

Add the minced beef and stir so it browns all over and cook for a further 5 minutes

Crumble the stock cube into 300ml/1⁄2 pint of hot water and pour into the pan with the mince mixture along with the chopped, tinned tomatoes, sugar and the ground corriander

Season to taste and add the tomato paste

Bring the mixture to the boil then reduce the heat and cover, cook for about 20 minutes stirring occasionally si it doesn’t stick

Add a little more water if it seems to be drying out

Drain and rinse the red kidney beans and add them to the pan

Bring the pan back to the boiul and then simmer for 10 minutes without the lid

Leave the chilli to stand  with the lid on for 10 minutes before serving
