Cheesy Mashed Potatoes



A great way to use up and leftover mash from Sunday lunch you can add bacon, tinned tuna, chopped up cooked sausage o in fact other leftovers you fancy to make a great snack or side dish to accompany meat or fish.

2-1/2 cups (625 mL) leftover mashed potatoes           
2/3 cup (160 mL) grated Cheddar Cheese
2 tbsp (30 mL) prepared barbecue sauce
1 onion, sliced (to create colour use a red onion)

Tablespoon butter

Tablespoon well crisped streaky bacon bits(optional)

A few chives to garnish


In a large frying pan, over medium heat heat through the  leftover mashed potatoes

In a separate frying pan cook the onions in the butter until golden brown

Stir the onions and the butter which you cooked them in into the potato mixture

Add the bacon bits (optional)

Remove from heat and stir in cheese and barbecue sauce.

Serve sprinkled with chives.
