Cheesy Green Peppers ready in 30 minutes and really tasty.  If you prefer you can use red peppers or yellow peppers or even a mixture for a colourful table display.


6 large green bell peppersCheesy Green Peppers
1 ½ tablespoons of onion, chopped
5 tablespoons of butter, seperate
2 cups of breadcrumbs
3 cups of grated Cheddar cheese
½ teaspoon of salt.
Pinch of black pepper


Pre-heat the oven to 375°F (190°C)

Wash, dry and prepare the peppers by slicing off the stem and de-seeding

Boil them for 5 minuted and then drain them (upside down)

In one tablespoon of the butter, fry the onion until tender

Combine the onion and butter mixture with remaining butter, breadcrumbs, 2 cups of the Cheddar, salt and black pepper and mix together thoroughly

Stuff the peppers with the mixture and then sprinkle the remaining cup of Cheddar on the top

Place the stuffed peppers into a well greased baking dish

Bake for about 30 minutes
