Carrot Paté is a cheap and delicious vegetarian paté can be served on crackers or toast or even in sandwiches for a picnic with other ingredients such as cold meats for non-vegetarians.  This receipe uses boiled carrots but for a more intense flavour you can roast them.


2 pounds of carrots, peeled

Carrot Pate

4 large garlic cloves
1 1/2 teaspoon of oregano
3/4 teaspoon of cumin
1 teaspoon of dried coriander
1/4 teaspoon of hot red pepper or chilli flakes
1/4 teaspoon of black pepper
1 teaspoon of salt
1 1/2 tablespoon of sherry vinegar or red wine vinegar
1/2 cup of olive oil
2 teaspoons of chopped fresh parsley


Slice carrots in rounds and boil in salted water for about 8-10 minutesuntil firm tender

Drain and put in a glass bowl.

In a blender blend all the ingredients except the oil, vinegar and parsley

Slowly add oil and vinegar in a steady stream, then pour over carrots.

Marinate for at least 2 hours or overnight if possible.

Put in food processor and process to the consistency you want

Stir in the parsley to serve
