A versatile filling or icing for cakes and biscuits.  To make it more interesting you can add food colourings.  Try adding lemon, almond or vanilla essence for a tasty filling.


40g/5oz butter, softenedButter Cream
280g/10oz icing sugar
1-2 tbsp milk


Beat the butter in a large bowl until soft

Add half of the icing sugar and beat until smooth

Add the remaining icing sugar and one tablespoon of the milk and beat the mixture until creamy and smooth.

If necessary beat in the rest of the milk to make a looser mixture

At this stage you can add and flavouring or colouring
