Bread and Cheese Pudding makes a great supper dish or lunch dish served with a nice salad.  To give the pudding a little more kick add a teaspoon of mustard to the egg.

IngredientsBread and Cheese Pudding

2 cups Milk
250 gm Cheddar cheese (grated)
3 Eggs (beaten)
½ tsp Cayenne Pepper (Red Chilli)
Salt and Black Pepper to taste
6 large thick slices of White Crusty Bread
1 tbsp Butter

 

Method

Preheat oven to 350 degrees F (175 degrees C).

Grease an ovenproof dish really well with  butter

Mix together in a bowl milk, 25 gm cheese, eggs, cayenne pepper, salt and pepper (If you have chosen to add mustard do so now)

Slice the bread into halves diagonally and put half of them into the prepared greased dish

Sprinkle with 125 gm of the cheese and top with the remaining slices of bread

Pour over the milk and egg mixture

Sprinkle over the remaining cheese over the top

Bake for 35 minutes or until browned on top

Cool slightly before serving
