Boxty – Traditional Irish Potato Cakes a good way to use up leftover mashed potatoes and can be served alone or with meat or fish.


250g mashed potato (warm)Boxty

60g plain flour

30g butter, melted



Put the mashed potato in a bowl, pour the butter over and sift in flour. Knead to form a dough. Turn the dough out onto a floured surface and roll out to about 5mm thick. Cut into 6 wedges or make into rounds if you prefer.

Dust a heated frying pan with flour. When the flour starts to brown put in the wedges or rounds . Cook for 3 minutes a side, until brown. Serve hot.
