Basic Sponge Sandwich Cake an easy sponge cake recipe which you can sandwich together with the filling of your choice. This recipe uses a filling of jam and cream.


2 medium eggsSandwich Cake
75 g (3 oz) caster sugar
75 g (3 oz) Self Raising Flour


Pre-heat oven to 180ºC, 350ºF, Gas Mark 4.

Grease an 18 cm (7 inch) cake tin.

In a bowl whisk the eggs lightly and add the sugar

Whist the mixture really well until it is almost white in colour

Fold in the flour using a metal spoon

Turn out the mixture into the ready greased cake tin

Bake for 30 minutes

Cool the cake on a cooling tray.

When it is cool slice and spread with jam and cream or the filling of your choice

Dust the top with icing sugar
