Baked Cod in Egg Sauce



1 Large code fillet of about 1 1/2 lb

Salt and Pepper

Juice of a lemon

2 oz butter

2 oz flour

1/2 pint milk

2 hard boiled eggs

Lemon slices and parsley to garnish



Wash and dry the cod fillet and sprinkle with salt and pepper.

Roll the fish into a round with the skin inside and secure with a cocktail stick or skewer.

Place in an oven proof dish just the right size to keep the fish in place.

Brush the outside of the fish with lemon juice and bake at Gas 4 – 350°F  for 30 to 25 minutes.


For the sauce

Melt the butter and stir in the flour and allow it to cook for a while until it sizzles.

Add the milk an season to taste and continue stirring until the mixture thickens then cook for a further 2 minutes.

Strain the liquid from the fish and add to the sauce.

Roughly chop the had boiled eggs and add them to the sauce.

Pour the sauce into the centre of the fish and garnish with slices of lemon and parsley.
