African Spinach Stew a traditional African recvipe and a hearty meal for the winter time. Serve with rice

IngredientsAfrican Spinach Stew

1 ½ lbs. steak
1 ½ lbs. fresh spinach, chopped
1 med. onion, sliced
1 med. red bell pepper, sliced
1 cup oil
1 ½ tbsp. tomato paste
1 tsp. salt
1 tsp. cayenne pepper
1 medium smoked herring, deboned (optional)


Cut steak into bite size chunks and season with salt and pepper.

In medium heavy saucepan, brown meat in oil, turning occasionally, until meat is tender when stuck with a fork

Remove meat from the pan and add remaining ingredients, except for spinach.

Cook for 15 minutes, then add spinach.

Cover and simmer for 20 minutes. Add meat and smoked herring, if using and cook for 10 minutes more.

Serve over rice.
